I'm THAT guy; the one who is going to keep you informed, make you laugh, make you think, and sometimes... I'm sure, I'll even make you shake your head. If you've been following me on Social Media, we've been building up to this for a while...

If you're in the industry, I am sure our paths have crossed at some point. This industry gives a whole new meaning to "it's a small world." 

I'm that guy from the party.

No not that guy.

Not the guy with the thing.

That bald, furry faced one... That Food Safety Guy!  The one that was talking about eating strange things and why you should too, or why that fad food is not as good for you as you think, or how we should be encouraging science to advance the safety and nutrition of what we eat, or how to find the best food at your local grocer.

Honestly, I think this is how most folks remember me.

By day, I am a food safety and sustainability leader with extensive experience protecting the consumer’s food through scientific efforts, regulatory, standard and policy compliance and development. Excellent at developing business relationships and collaborations that bring about new ground-breaking technologies, improved techniques and paradigm-shifting ideas. I use my eclectic experience and resources to find solutions to current problems. 

By night I am a geeky and proud father of some seriously nerdy children. I am a gourmand, a foodie, an avid connoisseur of the gastronomical and fermented arts.

​With over fifteen years in the food and service industry. My career has focused on microbiology, chemistry and education with some marketing and business development thrown in for fun. I have also, courtesy of the US Navy, had a chance to travel this great globe and sample the fine cuisines thereof. I take great joy in continuing that experience in civilian life.

My Charming Other Half decided she was tired of me complaining about the many misunderstandings of food online and what I see as obvious errors in food safety in many of my, and possibly some of your, favorite shows and restaurants. It was her idea that I use this format to address those issues and answer your queries. So all credit goes to her for this endeavor. In full disclosure, she is the technical expertise behind this website.

Closing today out with a salute to my brothers and sisters who never made it
home. In the life of a sailor, the best feeling is coming home from a deployment to
your family on the pier. The worst is coming home to no one. 

I have not had the sense of knowing I would not come home. I would speculate that
all that have taken the oath accept that possibility. Their families, perhaps not. 

A Veteran is someone who, at one point in his/her life wrote a blank check made
payable to The United States of America for an amount up to and including his or
her life. 

This Memorial Day honor the fallen and the ones whose check was cashed!!!

This weekend have a pint for those that could not make it home. Have another for
their families.
